Veggie Fritters

Fritters are such a great way to get veggies into kids. These veggie fritters are wonderful for baby-led weaning, little toddlers or even school lunch boxes. They taste great and kids love them too.

Traditionally, I’ve always made veggie fritters with mashed potato or kumara, however I found the whole process very time-consuming. Like so many other parents out there, I want to feed my kids healthy food, but have very little time to prepare it. If you’re like me, you will love these fritters because they are super easy to make.

If you’ve read any of my blog before, you will know that I have two kids that can’t tolerate egg or gluten, so I have made two versions of the veggie fritters and you can use whichever one suits you.

Please don’t feel you have to follow the recipe 100%, and I encourage you to use whatever veggies you have on hand.  You could also add cooked bacon, ham or chicken if you wanted to. The important thing here is that you want to aim for about 1.5 cups worth of veggies.

Veggie Fritters

These veggie fritters have only a few easy ingredients, and you can whip them up in no time. A great way to incorporate veggies into your child's diet and they taste great too.

Servings 18 fritters

Ingredients
  

  • 3/4 cup Flour
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 tsp Garlic powder
  • 2 Free range eggs
  • 1/2 cup Cooked Peas
  • 1/2 cup Cooked Corn
  • 1 Grated Zucchini (Approx 1/2 cup)
  • 1/8 Chopped Onion
  • Olive / Coconut Oil

Instructions
 

  • In a medium mixing bowl, add the flour and seasoning and stir. Now add the eggs and whisk to remove any clumps.
  • Add the veggies to the batter and mix until well combined.
  • Heat 1 tablespoon of oil in a non stick frying pan on a medium heat. Spoon
    the fritter batter into the pan. Cook over a medium heat for 2-3 minutes until
    bubbles appear on the surface of the batter or until the edges appear cooked.
    Flip and cook the other side for a further 2-3 minutes until fritters are
    golden and cooked through. Repeat until all the batter is finished.

  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 tsp Garlic powder
  • 1/2 cup Water
  • 1/2 cup Cooked Peas
  • 1/2 cup Cooked Corn
  • 1 Grated Zucchini (about 1/2 cup)
  • 1/8 Onion (Chopped)
